Whey Pancakes

If you are looking for a way to use your extra whey, try these Whey Pancakes

Whey Pancakes
2 cups  Unbleached All-Purpose or Traditional Whole Wheat Flour or you can use some of each
1 to 2 tablespoons sugar, honey, maple syrup or agave. (I use Stevia to equal 2 Tablespoons)
1 teaspoon baking soda
1/2 teaspoon salt
2 cups whey (You may need to add more whey to make it thinner.)
2 large eggs

1 teaspoon vanilla
2 to 4 tablespoon vegetable oil

Mix the dry ingredients together in a mixing bowl.

In a smaller bowl, beat together the whey, eggs and vegetable oil.

Blend the liquid and dry together, stir for aprox. 20 seconds.   This will resemble the batter of muffins.

If you have a cast iron skillet, use that to cook your pancakes.  I top with agave nectar.

I often replace the milk in my pancake recipe with the whey from making butter. It works just as well as milk and buttermilk. :) Pancakes sound delicious right now!

I have never tried whole wheat flour but I don't know why, I use wheat everything else. I will have to try it and these pancakes. They look delicious!!!

We've been topping pancakes with the strawberry syrup (well, it was supposed to be strawberry jelly, but it didn't set up) that we canned last May - it's pretty good!
