Carrot Kefir Cake ~ Made With Stevia
2 cups Whole Wheat Flour
1 Tablespoon Baking Powder
1/2 teaspoon salt
1/2 teaspoon stevia concentrate powder
1/4 cup chopped walnuts
2 Eggs
1/4 cup applesauce (unsweetened)
1 cup raisins (optional)
2 Cups Grated Carrots
1 1/2 Cup Kefir Milk
1/2 Tablespoon Cinnamon
Directions:
Cream all moist ingredients together except eggs.
Add stevia and mix well.
Then add the remaining ingredients and stir.
Place in a greased and floured 13X9X2 cake pan and bake at 350 for 35-40 minutes.
Kefir Cream Cheese Frosting ~ Made With Stevia
16 ounces Kefir Cream Cheese
1/2 teaspoon stevia powder (Or sweetened to your liking)
1 teaspoon vanilla extract
Mix together and frost cooled cake

YUMMY!!! I made a carrot cake once that was made with baby food prunes. I had to be very careful about what I put in it. It was for my sister. She was breastfeeding at the time, and my nephew couldn't tolerate certain foods!

This looks really great! I made a carrot cake this weekend too. :) I just tried stevia for the first time last week in some tea and we really liked it. I am going to try it in a baked good later this week. I hope we like it that way too!

This looks tasty. Did you know Stevia fights infection and you can even put it on a cut and it will help heal it. Great stuff.
