
Simply Sugar and Gluten Free
As I was eating my lunch of Flax Bread, spinach, tomato and egg whites.
I got to thinking, I could really go for a good, quick dessert for my afternoon snack.
I have had this Flax Meal Muffin recipe saved for months to try. I think today is a great day to try it.
I frosted mine with almond butter and sprinked some stevia over it.
This tasted very good, although it was just a tad on the dry side. I will only make 1/2 a batch next time because this was way to much for me to eat in one sitting. I also need to look for a frosting recipe that I can use. Once I can eat fruits again, this would be great with apples in it.
Flax Meal Muffin In A Cup In 5 Minutes
1/2 Cup Flax Meal
1 Large Egg (I use egg whites)
1 teaspoon ground cinnamon
2 Packets Stevia
1/2 Tablespoon Oil
1/2 teaspoon baking soda
1 Dash Salt
Mix dry ingredients well.
Stir in melted butter and beaten egg.
Pour ingredients into a coffee mug. (I mixed mine in the mug)
Microwave on high for 1 to 1 1/2 minutes.
Eat as it is or put your favorite topping on it.

Will this work using the oven instead? I don't use microwaves.

It would probably be like making a cupcake. I haven't tried it in an oven but I can't see why not. I would turn the oven to 350 degrees.
I am thinking about not using a microwave any longer also. They are so bad for us.

I actually found another recipe that uses the oven. I've been experimenting the last couple days.
6 eggs
1 Stick - Butter
6 Tbs - Stevia (or 10 Tbs of Xylitol) You'll have to experiment with these depending on how sweet you want it.
1 Tbs - Vanilla
1 Tbs - Baking powder
3-4 Tbs - Cinnamon
1 cup - Ground flax seed meal
Put everything in a blender and then pour the contents into a muffin tray. Makes 12. You could also use almonds. Just make sure they're raw and soak them in water over night to get rid of the mold.
I prefer the Xylitol version. I like both though. When they're done, you can butter the tops and sprinkle some stevia or Xylitol on top. Stuff is good. Smells like french toast when it's baking.

Mmmmm ... this sounds really good. I am going to try it. I can now use real butter, I bet it makes it taste so much better than oil.
When I make flax cake, it is so moist that I keep it in the fridg so it doesn't mold on me.

Hi! I stumbled upon this blog today because of a Slightly Indulgent Tuesdays post. I love grain-free, anti-candida recipes! Do you post recipes often, Terry? I'm glad that some oven instructions have been posted, too. We don't use our microwave at all anymore...too many reasons not to.
